This paper describes the challenges, philosophy and processes encountered during the planning of two major project sites in Accra (Ghana) and in Onitsha (Nigeria) that involved a substantial amount of civil and structural input and design planning. There are standard areas on a brewery site, yet contained within each is a web of mechanical, structural and microbiological intricacy. A basic understanding of the brewing process is essential in order to plan a brewery or a brewery extension—this paper puts together a basic understanding and summary of the art, science and process involved from a civil/structural engineer’s perspective with the goal being to create a basic framework of understanding for future reference. The two projects are used as reference to the basic elements and concepts that go into a functional brewery.
