Changes of temperature induced in selected samples by pronounced pressure variations


Abstract eng:
The changes of temperature induced in selected samples by pronounced pressure variations have been studied with the aim to optimalize the relevant food processing. Models of energy and heat transfer have been elaborated a precision of which can increase with increasing number of the relevant experiments. In this contribution, the starting relation, experimental curves of a time evolution of temperature during the pressure cycles and the results of computational procedures based on the IAPWS water thermodynamic parameters have been presented.
